Even though most of us in San Antonio still have a week of school left, summer has already arrived in our hearts. When that Texas heat comes a callin’, all we want are quick, simple, tasty dishes that don’t take a lot of time in the kitchen. During last week’s link up, San Antonio mom bloggers shared six recipes perfect for summer, some featuring fresh avocados, a couple with colorful veggies, and one showing off a new way to Tex-up meatloaf leftovers. Get to pinning, y’all, because you’ll refer to these delicious recipes all summer long:
Michelle’s created an easy, cool and crisp taco salad with her fresh and creamy avocado vinaigrette. She’s also got a kid-friendly version that still keeps this summer supper a breeze to make.
Patti’s known for her occasionally audacious blog posts (they’re always fascinating and quite often hilarious). Her recipes are no different. She takes traditional meatloaf leftovers and turns them into…meatloaf quesadillas! Yes, I’m serious. And, no, she’s never steered us wrong.
If fruit’s a favorite summer treat at your house, whip up Sarah’s recipe for a fun, chilly fruit dip your whole family will love.
Sara agrees that turning on her oven in the summer is not an appealing prospect. Instead, she prepares as many meals as she can on the stove top. Her recipe for goulash is full of yummy veggies and hearty meat, but cooking it won’t heat up your already summer-warmed home.
Avocados get the spotlight in Lilliana’s summertime recipe too. She serves her avocado tomatillo sauce as a dip for her girls’ chicken nuggets to give them a bolder flavor and a burst of extra nutrients.
And, if Jessica’s colorful veggie tacos don’t float your summertime boat, you may want to check your pulse. They’ll bring bright, healthy flavors to your table that are so good, you won’t even miss the meat.
