There’s always an abundance of over-ripe bananas at our house. I usually whip them up into banana chocolate chip bread but today I wanted something a little different. I found this pin which led to a recipe for banana oat muffins. What a perfect Sunday breakfast treat!
The recipe was super easy: mix the dry stuff, mix the wet stuff, mix them together, bake. I changed one thing: the recipe called for 3/4 c. milk. All we had was skim but we did have some half and half. I used 1/2 c. milk and 1/4 c. half and half to give it a little extra fat.
The resulting muffins were perfectly browned on the outside and light and fluffy on the inside. They were only slightly sweet (I assume less sugar is called for because bananas are naturally sweet), which I love because I plan to serve these to my kids for breakfast this week. I would have liked the banana flavor to be more pronounced but I suppose if you add too much banana, the muffins wouldn’t firm up and they’d probably get too mushy.
All in all, this is a quick, yummy recipe that I’ll definitely make again.
